What Is Sucralose?
Sucralose (INN; E-number E955) is 4,1′,6′-trichloro-4,1′,6′-trideoxygalacto-sucrose, a non-caloric, non-cariogenic high-intensity sweetener produced by selective chlorination of sucrose (replacing three hydroxyl groups with Cl at 4-, 1′-, and 6′-positions). Originally developed by Tate & Lyle / University of London (patent filed 1976, brand Splenda®), it is now permitted in 120+ countries and used in 25,000+ SKUs worldwide.
Key attributes:
– Sweetness: ~600× sucrose (clean, sugar-like profile; no bitter aftertaste unlike aspartame/acesulfame-K)
– Caloric value: ~0 kcal/g (not metabolised; suitable for diabetics, obesity, CVD patients)
– Stability: heat-stable to ~200 °C; pH-stable 3–5 (holds >12 months in acidic beverages)
